It is all too common to hear of food recalls due to an outbreak of e-coli. The latest recall so far has affected ten states, including Minnesota. Just this case alone has led to almost 200 illnesses and 200,000 pounds of meat pulled off shelves. This is a major blow to the beef industry and economy as a whole, and it can be avoided.
Did you know E-coli are plentiful in all beef animals, even grass-fed?
Let’s highlight the fact that e-coli in general are not evil, in fact they are necessary for cattle to digest their food. The trouble happens when cattle are fed grains. Their digestive system becomes much more acidic forcing the e-coli to do what any natural organism would do, they adapt. Strains that will survive a more acidic environment begin to be created. In fact the strains become so well adapted that they can survive the even harsher acids in our stomachs, resulting in potential health problems.
The benefit of grass fed beef.
Studies have shown that 99.99% of the e-coli in grass-fed beef are destroyed in the human stomach. Reason being is that grass-fed animals have a much healthier pH (acid level) and the e-coli can continue to function as normal in this environment without creating acid tolerant strains.
We all still NEED to follow Safe Handling and Cooking Recommendations!!! Whether it is grass-fed or grain-fed make sure meat is prepared to a safe temperature. Contamination can never be 100% avoided so be smart to avoid sickness!
